Ingredients
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 (15 oz) can black beans, drained and rinsed
1 teaspoon ground cumin
1/2 teaspoon chili powder
Salt to taste
4 large flour tortillas (10-inch)
1 cup refried beans
1 cup shredded Mexican blend cheese
1/2 cup salsa
1/2 cup sour cream
1 avocado, sliced
1/4 cup chopped fresh cilantro
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook 1 minute more.
Add black beans, cumin, chili powder, and salt. Cook for 2-3 minutes, mashing slightly with a fork. Remove from heat.
Place two tortillas on the prepared baking sheet. Spread refried beans evenly over each tortilla, then top with the black bean mixture.
Sprinkle shredded cheese over the beans. Place the remaining two tortillas on top to form two stacks.
Bake for 10-12 minutes until cheese is melted and tortillas are crisp.
Remove from oven and top with salsa, sour cream, avocado slices, and cilantro. Cut into wedges and serve immediately.
Tips
For a spicier version, add diced jalapeños to the bean mixture.
Serve with extra salsa and sour cream on the side.
