  3. Heat 1 tablespoon oil in a large pot over medium heat. Add onion and garlic; cook until soft (5 minutes). Add tomatoes and plantain; cook for 5 minutes. Stir in the toasted spices and soaked chiles.
  4. Add the chocolate and 1 cup of the reserved chile soaking liquid. Cook, stirring, until chocolate melts. Add chicken broth and bring to a simmer. Cook for 20 minutes, stirring occasionally.
  5. Let the mixture cool slightly, then transfer to a blender (in batches if needed) and blend until very smooth. Strain through a fine-mesh sieve back into the pot, pressing on solids.
  6. Heat remaining 2 tablespoons oil in the pot over medium heat. Pour in the strained sauce and cook, stirring constantly, for 10-15 minutes until thickened. Season with salt and sugar if needed. Adjust consistency with additional broth if desired.
  7. Serve warm over chicken, turkey, or enchiladas.
