Menma is a Japanese condiment made from fermented bamboo shoots, often used as a topping for ramen. This recipe recreates the savory, slightly tangy flavor at home using dried bamboo shoots.

Ingredients
2 oz dried bamboo shoots (menma)
2 cups water
2 tablespoons soy sauce
1 tablespoon mirin
1 tablespoon sake
1 teaspoon sugar
1/2 teaspoon sesame oil
1/4 teaspoon chili flakes (optional)
Instructions
Rinse dried bamboo shoots under cold water. Soak in 2 cups water for 30 minutes, then drain and reserve soaking liquid.
In a small saucepan, combine soaked bamboo shoots, 1 cup of the reserved soaking liquid, soy sauce, mirin, sake, sugar, and sesame oil. Add chili flakes if using.
Bring to a boil over medium-high heat, then reduce heat to low and simmer, uncovered, for 20 minutes, stirring occasionally, until liquid is mostly absorbed and bamboo shoots are tender.
Remove from heat and let cool. Store in an airtight container in the refrigerator for up to 2 weeks.
Tips
For a deeper flavor, add a small piece of kombu (dried kelp) while simmering.
Menma can be served cold or at room temperature as a ramen topping.
Adjust sweetness or saltiness to taste by varying sugar or soy sauce.
