  2. Place the chopped dark chocolate in a heatproof bowl. Set over a pot of simmering water (double boiler) and melt, stirring occasionally, until smooth. Alternatively, microwave in 30-second bursts, stirring between each.
  3. Remove the melted chocolate from heat and let it cool slightly for 1-2 minutes.
  4. Spoon or pour the chocolate onto the prepared baking sheet in 8 equal discs (about 2 tablespoons each), leaving space between them.
  5. While the chocolate is still wet, arrange the dried fruits and nuts on each disc: place a few pieces of fig, apricot, almond, walnut, raisin, pistachio, and optional candied orange peel on each, pressing gently so they adhere.
  6. Refrigerate the mendiants for at least 30 minutes until set.
  7. Once firm, peel off the parchment paper and serve at room temperature.
