Ingredients
1 cup cooked chickpeas (canned, drained and rinsed)
1/4 cup tahini
2 tablespoons lemon juice
1 clove garlic, minced
1/2 teaspoon salt
2 tablespoons olive oil
1 large eggplant
1/4 cup plain yogurt
1/2 teaspoon cumin
1/2 cup pitted Kalamata olives
1/2 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/4 cup fresh parsley leaves
4 pita breads, warmed and cut into wedges
Instructions
Make hummus: In a food processor, blend chickpeas, tahini, lemon juice, garlic, salt, and 1 tablespoon olive oil until smooth. Add water a tablespoon at a time if too thick. Transfer to a bowl.
Make baba ganoush: Preheat oven to 400°F. Prick eggplant with fork, roast on a baking sheet 30-40 minutes until soft. Let cool, peel, and mash flesh. Mix with yogurt, cumin, 1 tablespoon olive oil, and salt to taste.
Arrange hummus, baba ganoush, olives, tomatoes, cucumber, and parsley on a large platter.
Serve with warm pita wedges.
Tips
Drizzle extra olive oil and sprinkle paprika on hummus for garnish.
Add other mezze like stuffed grape leaves or feta cheese if desired.
