Ingredients
1 cup farro
3 cups water
1/2 teaspoon salt
1 can (15 oz) chickpeas, drained and rinsed
1 tablespoon olive oil
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
1/4 teaspoon black pepper
1 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup Kalamata olives, halved
1/4 cup crumbled feta cheese
For the dressing: 3 tablespoons olive oil, 2 tablespoons lemon juice, 1 clove garlic (minced), 1/2 teaspoon dried oregano, salt and pepper to taste
Instructions
Rinse farro under cold water. In a medium saucepan, combine farro, water, and 1/2 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until tender. Drain any excess water and let cool slightly.
While farro cooks, heat 1 tablespoon olive oil in a small skillet over medium heat. Add chickpeas, cumin, smoked paprika, and black pepper. Cook for 5-7 minutes, stirring occasionally, until chickpeas are lightly browned and fragrant. Set aside.
In a small bowl, whisk together dressing ingredients: olive oil, lemon juice, minced garlic, dried oregano, and salt and pepper to taste.
In a large bowl, combine cooked farro, roasted chickpeas, cherry tomatoes, cucumber, red onion, and olives. Drizzle with dressing and toss gently to combine.
Divide mixture among 4 bowls. Top each with crumbled feta cheese. Serve warm or at room temperature.
Tips
For extra protein, add grilled chicken or tofu.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
You can substitute farro with quinoa or barley if desired.
