Ingredients
1 lb ground beef (80/20)
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg, lightly beaten
2 cloves garlic, minced
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
2 cups marinara sauce
4 submarine rolls (about 8 inches each)
8 slices mozzarella cheese
Instructions
Preheat oven to 375°F. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Mix gently until just combined; do not overmix.
Form mixture into 16 meatballs (about 1.5 inches each).
Heat olive oil in a large skillet over medium-high heat. Brown meatballs on all sides, about 5 minutes total. Transfer to a plate.
In the same skillet, add marinara sauce and bring to a simmer. Return meatballs to the skillet, cover, and cook for 10 minutes, until cooked through.
Slice submarine rolls lengthwise without cutting all the way through. Place on a baking sheet. Spoon a little sauce on the bottom of each roll.
Place 4 meatballs in each roll. Top with mozzarella slices (2 per sandwich).
Bake for 5-7 minutes, until cheese is melted and rolls are toasted. Serve immediately.
Tips
For extra flavor, add a pinch of red pepper flakes to the sauce.
Use a meat thermometer to ensure meatballs reach 160°F internally.
Leftover meatballs can be stored in the fridge for up to 3 days.
