Ingredients
1 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, beaten
1 cup panko breadcrumbs
Vegetable oil for frying
1/2 cup pineapple juice
1/4 cup rice vinegar
1/4 cup ketchup
3 tablespoons brown sugar
1 tablespoon soy sauce
Instructions
In a shallow dish, combine flour, garlic powder, onion powder, salt, and pepper. In another dish, place beaten eggs. In a third dish, place panko breadcrumbs.
Dredge each chicken piece in flour mixture, then dip in egg, then coat with panko, pressing gently to adhere. Place on a baking sheet.
Heat 1/2 inch oil in a large skillet over medium-high heat to 350°F. Fry nuggets in batches, turning occasionally, until golden brown and cooked through, about 4-5 minutes. Drain on paper towels.
For the sauce: In a small saucepan, combine pineapple juice, rice vinegar, ketchup, brown sugar, and soy sauce. Bring to a simmer over medium heat, stirring occasionally. Cook until slightly thickened, about 5 minutes. Remove from heat.
Serve nuggets with sauce for dipping.
Tips
For extra crunch, use seasoned panko or add a pinch of paprika to the breadcrumbs.
