1 pound bulk pork breakfast sausage
1 cup complete pancake mix (just add water)
1/2 cup water (for pancake mix)
2 tablespoons maple syrup (plus more for serving)
6 large eggs
2 tablespoons milk
Salt and pepper to taste
4 slices American cheese
2 tablespoons butter, divided
Instructions
Form the sausage into 8 small patties (about 2 oz each). Cook in a large skillet over medium-high heat until browned and cooked through, about 4 minutes per side. Transfer to a plate and keep warm.
In a bowl, whisk together pancake mix, water, and 2 tablespoons maple syrup until smooth. Heat a griddle or non-stick skillet over medium heat and lightly grease. Pour about 2 tablespoons of batter per pancake to make 8 small pancakes (about 3 inches wide). Cook until bubbles form on surface, then flip and cook until golden, about 2 minutes per side. Keep warm.
In a bowl, beat eggs with milk, salt, and pepper. In a non-stick skillet, melt 1 tablespoon butter over medium heat. Add eggs and cook, stirring gently, until soft curds form, about 3-4 minutes. Remove from heat.
To assemble: Place 4 pancakes on a platter. Top each with a slice of cheese, a sausage patty, a portion of scrambled eggs, and another sausage patty. Top with remaining pancakes to form mini sandwiches. Serve with extra maple syrup on the side.
Tips
For extra flavor, add a pinch of sage or thyme to the sausage patties.
Make the pancakes slightly larger if you prefer a bigger sandwich.
