Ingredients
4 frozen buttermilk biscuits (such as Pillsbury Grands)
1 lb bulk breakfast sausage
4 large eggs
2 tbsp milk
Salt and pepper to taste
4 slices American cheese
1 tbsp butter (for cooking eggs)
Instructions
Preheat oven and bake biscuits according to package directions.
While biscuits bake, divide sausage into 4 equal portions and shape into thin patties slightly larger than the biscuits. Cook in a skillet over medium-high heat until browned and cooked through, about 4 minutes per side. Drain on paper towels.
In a bowl, whisk eggs with milk, salt, and pepper. Melt butter in a non-stick skillet over medium heat. Pour in egg mixture and cook undisturbed until edges are set. Gently fold the egg into a rectangle about the size of a biscuit, then flip to cook through. Cut into 4 equal squares.
Split baked biscuits in half. Place a sausage patty on the bottom half, top with an egg square and a slice of cheese. Cover with biscuit top.
Serve immediately.
Tips
For a crispier biscuit, brush tops with melted butter before baking.
To save time, use pre-cooked sausage patties.
Sandwiches can be assembled and wrapped in foil to keep warm.
