- 2 tablespoons tamarind paste
- 4 cups water
- 1 tablespoon vegetable oil

- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 2 green chilies, slit lengthwise
- 1 teaspoon turmeric powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt to taste
- 2 tablespoons chopped fresh cilantro
Instructions
- In a small bowl, dissolve tamarind paste in 1 cup warm water; set aside.
- Heat oil in a large pot over medium heat. Add mustard seeds and cumin seeds; cook until they start to pop.
- Add onion, garlic, and ginger; sauté until onion is translucent, about 3 minutes.
- Add green chilies, turmeric, ground cumin, and ground coriander; cook for 1 minute until fragrant.
- Pour in the tamarind mixture and remaining 3 cups water. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Season with salt to taste. Stir in fresh cilantro before serving.

- Adjust the amount of green chilies to your preferred spice level.
- Serve hot or at room temperature. Can be stored in the refrigerator for up to 3 days.
