Ingredients
1 large bunch curly kale (about 8 ounces), stems removed and leaves torn into bite-size pieces
2 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 cup dried cranberries
1/4 cup toasted sliced almonds
1/4 cup shaved Parmesan cheese
Freshly ground black pepper to taste
Instructions
Place the kale pieces in a large bowl. Drizzle with olive oil and lemon juice, and sprinkle with salt.
Using your hands, massage the kale for 2-3 minutes, squeezing and rubbing the leaves until they become darker, softer, and reduced in volume.
Add the dried cranberries, toasted almonds, and shaved Parmesan. Toss to combine.
Season with black pepper to taste. Serve immediately or refrigerate for up to 2 hours.
