Ingredients
- 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
- 1/2 cup whole milk
- 4 tablespoons unsalted butter, softened
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 2 tablespoons sour cream or cream cheese
Instructions
- Place potato chunks in a large pot and cover with cold water by 1 inch. Add 1 teaspoon salt.
- Bring to a boil over high heat, then reduce to medium-low and simmer until potatoes are fork-tender, about 15-20 minutes.
- Drain potatoes well and return to the pot. Cook over low heat for 1-2 minutes to remove excess moisture.
- Warm the milk and butter together in a small saucepan or microwave until butter is melted.
- Mash potatoes with a potato masher or ricer until smooth. Gradually add milk mixture, mashing until creamy.
- Season with salt and pepper to taste. Stir in sour cream or cream cheese if using.
- Serve immediately, or keep warm covered with foil in a low oven.
Tips
- For extra creamy potatoes, use a ricer or food mill instead of a masher.
- To make ahead, prepare as directed and keep warm in a slow cooker on low for up to 2 hours.
- Leftovers can be refrigerated for up to 3 days; reheat with a splash of milk.
