Ingredients
1 (5-7 lb) bone-in ham or 1 (4-5 lb) whole chicken
1 cup orange marmalade
2 tablespoons Dijon mustard
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
Salt and pepper to taste
Instructions
Preheat oven to 325°F (160°C).
If using ham, score the surface in a diamond pattern. If using chicken, pat dry and season inside and out with salt and pepper.
In a small bowl, mix marmalade, mustard, brown sugar, vinegar, cloves, and ginger to make the glaze.
Place ham or chicken on a rack in a roasting pan. Brush generously with glaze.
Roast, basting every 15-20 minutes with remaining glaze, until internal temperature reaches 140°F for ham or 165°F for chicken (about 15 minutes per pound).
Let rest 10 minutes before slicing. Serve with pan juices.
Tips
For extra flavor, add a splash of bourbon or orange juice to the glaze.
Leftover glaze can be refrigerated for up to a week and used on roasted vegetables.
If using a spiral-cut ham, wrap loosely in foil to prevent drying.
