Instructions
- In a small bowl, whisk together soy sauce, mirin, rice vinegar, sesame oil, and honey until well combined.
- Add minced garlic, grated ginger, and red pepper flakes (if using). Stir to incorporate.
- Place tofu or fish in a shallow dish or resealable bag. Pour marinade over, turning to coat evenly.
- Cover and refrigerate for at least 30 minutes, or up to 2 hours for tofu, 30 minutes for fish.
- Cook as desired (grill, pan-sear, or bake), discarding leftover marinade.
