Ingredients
1 pound (2 cups) dried navy beans, soaked overnight
1/2 cup pure maple syrup
1/4 cup ketchup
2 tablespoons molasses
1 tablespoon yellow mustard
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1 small onion, diced
4 cups water (or reserved bean cooking liquid)
4 slices bacon, chopped (optional)
Instructions
Drain and rinse soaked beans. Place in a large pot, cover with fresh water by 2 inches, bring to a boil, then reduce to a simmer and cook for 1 hour until tender. Drain, reserving 4 cups of cooking liquid.
Preheat oven to 300°F (150°C).
In a large bowl, whisk together maple syrup, ketchup, molasses, mustard, salt, pepper, and smoked paprika.
Stir in the cooked beans, diced onion, and bacon (if using). Transfer to a 2-quart baking dish or Dutch oven.
Pour the reserved bean liquid (or water) over the beans until just covered. Cover with a lid or foil.
Bake for 2 1/2 to 3 hours, stirring occasionally, until beans are tender and sauce is thickened. If too thin, uncover for the last 30 minutes.
Let stand for 10 minutes before serving. Adjust seasoning to taste.
Tips
Soaking beans overnight reduces cooking time; if short on time, use quick-soak method (boil 2 minutes, let stand 1 hour).
Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
To make vegetarian, omit bacon and use vegetable broth or water.
