A refreshing and vibrant sorbet made with fresh mandarin oranges, perfect for a light dessert. For an ice cream version, simply add cream and reduce water.

Ingredients
1 cup fresh mandarin juice (about 4-5 mandarins)
1/2 cup granulated sugar
1/2 cup water
1 tablespoon lemon juice
1 teaspoon mandarin zest (optional)
Instructions
In a small saucepan, combine sugar and water. Heat over medium heat, stirring, until sugar dissolves. Remove from heat and let cool to room temperature.
Stir in mandarin juice, lemon juice, and zest until well combined.
Pour mixture into an ice cream maker and churn according to manufacturer's instructions until thick and slushy.
Transfer to a freezer-safe container and freeze for at least 4 hours or until firm.
For ice cream: replace water with 1/2 cup heavy cream and reduce mandarin juice to 3/4 cup. Proceed as above.
Tips
For a smoother sorbet, strain the juice to remove pulp.
