Ingredients
1/2 cup sliced almonds
1/4 cup white sugar
1 head romaine lettuce, torn into bite-size pieces
2 (11 ounce) cans mandarin oranges, drained
1/2 cup chopped green onions
1/4 cup vegetable oil
2 tablespoons white vinegar
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1 pinch ground black pepper
2 tablespoons white sugar
1 tablespoon poppy seeds
Instructions
1. In a small skillet over medium heat, cook almonds and 1/4 cup sugar, stirring constantly, until almonds are coated and sugar is melted and lightly browned. Spread onto waxed paper to cool.
2. In a large bowl, combine romaine lettuce, mandarin oranges, green onions, and candied almonds.
3. In a small bowl, whisk together oil, vinegar, parsley, salt, pepper, 2 tablespoons sugar, and poppy seeds until well blended.
4. Pour dressing over salad just before serving and toss to coat.
Tips
To make ahead, prepare candied almonds and dressing separately; store almonds in an airtight container and dressing in the refrigerator. Assemble salad just before serving.
Substitute pecans or walnuts for almonds if desired.
