Ingredients
1 lb fresh mahi mahi fillets, skinned and cut into 1/2-inch cubes
1/2 cup fresh lime juice
1/4 cup fresh lemon juice
1/2 cup finely chopped red onion
1 jalapeño, seeded and minced
1 cup diced seeded tomato
1/2 cup chopped fresh cilantro
1 avocado, diced
Salt to taste
Tortilla chips or tostadas for serving
Instructions
In a glass or ceramic bowl, combine the mahi mahi cubes with lime and lemon juice. Ensure fish is fully submerged. Cover and refrigerate for 15-20 minutes, until fish is opaque and 'cooked' through.
While fish marinates, prepare the vegetables: finely chop red onion, mince jalapeño, dice tomato, chop cilantro, and dice avocado.
Once fish is ready, drain off about half of the citrus juice. Add red onion, jalapeño, tomato, and cilantro. Gently stir to combine.
Fold in diced avocado. Season with salt to taste.
Serve immediately with tortilla chips or on tostadas.
