  2. In the same pot, sauté onion until soft, about 5 minutes. Add garlic and ginger; cook 1 minute.
  3. Stir in diced tomatoes, peanut butter, and chicken broth. Whisk until peanut butter is smooth.
  4. Return chicken to pot. Add carrots, sweet potato, bell pepper, salt, and cayenne. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes, until chicken is cooked through and vegetables are tender.
  5. Remove chicken and let cool slightly. Shred meat off bones and return to pot. Discard bones.
  6. Taste and adjust seasoning. Serve over rice, garnished with cilantro.
