3 cups sweetened shredded coconut
4 large egg whites
3/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup all-purpose flour (optional, for stability)
Instructions
Preheat oven to 325°F (165°C). Line two baking sheets with parchment paper.
In a large bowl, whisk together egg whites, sugar, vanilla, and salt until frothy.
Fold in shredded coconut and flour (if using) until well combined.
Drop rounded tablespoonfuls of mixture onto prepared baking sheets, spacing about 2 inches apart.
Bake for 15-18 minutes, until edges are golden brown and tops are lightly browned.
Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
