Ingredients
8 oz (225g) elbow macaroni
2 tbsp olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 can (28 oz / 800g) crushed tomatoes
1 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
1 tbsp tomato paste (optional, for richness)
1/4 cup grated Parmesan cheese (for serving)
Instructions
Bring a large pot of salted water to a boil. Add macaroni and cook according to package directions until al dente. Drain and set aside.
While pasta cooks, heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in crushed tomatoes, oregano, basil, salt, pepper, and tomato paste if using. Bring to a simmer and cook for 10 minutes, stirring occasionally.
Add the cooked macaroni to the sauce and toss to coat. Cook for 1-2 minutes until heated through.
Serve hot, topped with grated Parmesan cheese.
Tips
For a creamier sauce, stir in 2 tablespoons of butter or heavy cream at the end.
