Ingredients
8 oz elbow macaroni
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups whole milk
1 cup heavy cream
2 cups shredded sharp cheddar cheese
1 cup shredded Gruyère cheese
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp paprika
1/2 cup panko breadcrumbs
1 tbsp melted butter
1 lb cooked lobster meat, chopped
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook macaroni according to package directions until al dente. Drain and set aside.
In a large saucepan, melt 2 tbsp butter over medium heat. Whisk in flour and cook for 1 minute.
Gradually whisk in milk and cream. Cook, stirring constantly, until thickened, about 5 minutes.
Remove from heat. Stir in cheddar, Gruyère, salt, pepper, and paprika until smooth.
Fold in cooked macaroni and lobster. Transfer to prepared baking dish.
In a small bowl, mix panko with melted butter. Sprinkle over macaroni mixture.
Bake for 20-25 minutes until bubbly and golden. Let rest 5 minutes before serving.

If using raw lobster, steam or boil it first, then chop.
