Ingredients
1 cup elbow macaroni
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1 cup shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
1 large egg, beaten
1/2 cup panko breadcrumbs
Vegetable oil for frying
Instructions
Cook macaroni according to package directions until al dente. Drain and set aside.
In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
Gradually whisk in milk, salt, pepper, and paprika. Cook, stirring constantly, until thickened, about 3-4 minutes.
Remove from heat and stir in cheddar and mozzarella until melted. Fold in cooked macaroni. Transfer to a bowl, cover, and refrigerate until firm, at least 2 hours or overnight.
Shape chilled mac and cheese into 1-inch balls. Place on a baking sheet lined with parchment paper.
Dip each ball into beaten egg, then roll in panko breadcrumbs to coat. Return to baking sheet.
Heat 2 inches of oil in a deep pot to 350°F (175°C). Fry bites in batches until golden brown, about 2-3 minutes. Drain on paper towels.
Serve warm with your favorite dipping sauce.
Tips
For a baked version, spray bites with cooking spray and bake at 400°F for 12-15 minutes, turning halfway.
These can be frozen before frying; fry directly from frozen, adding 1-2 minutes to cooking time.
Serve with ketchup, ranch dressing, or spicy sriracha mayo.
