Ingredients
1 cup basmati rice
1.5 cups chicken or vegetable broth
1/2 cup macadamia nuts, coarsely chopped
1 small onion, finely chopped
2 tablespoons butter or olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
Rinse the rice under cold water until the water runs clear; drain well.
In a medium saucepan, melt butter over medium heat. Add onion and cook until softened, about 3 minutes.
Add the rice and stir for 1 minute until lightly toasted.
Pour in the broth, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until liquid is absorbed and rice is tender.
While rice cooks, toast macadamia nuts in a dry skillet over medium heat, stirring frequently, until golden and fragrant, about 3-4 minutes. Set aside.
