Ingredients
2 slices sourdough or white bread
1 cup leftover mac and cheese (or prepared from box)
1 tablespoon unsalted butter, softened
2 slices cheddar or American cheese (optional)
Instructions
Butter one side of each bread slice.
Place one slice, buttered side down, in a non-stick skillet over medium heat.
Spread the mac and cheese evenly on the bread in the skillet. If using, top with cheese slices.
Place the second bread slice on top, buttered side up.
Cook until the bottom is golden brown and crispy, about 3-4 minutes. Carefully flip the sandwich.
Cook the other side until golden brown and the mac and cheese is heated through, another 3-4 minutes.
Remove from skillet, let cool for 1 minute, then slice and serve.
Tips
For extra crunch, use a cast-iron skillet.
