Ingredients
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
1/2 teaspoon vanilla extract
1/2 cup mini M&M's (or regular, roughly chopped)
Instructions
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together buttermilk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Gently fold in the M&M's.
For pancakes: Heat a griddle or non-stick pan over medium heat. Lightly grease with butter or oil. Pour about 1/4 cup batter per pancake onto the griddle. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
For waffles: Preheat a waffle iron and lightly grease. Pour enough batter to cover the grids (about 1/2 cup for a standard waffle iron). Cook according to manufacturer's instructions until golden and crisp.
Serve immediately with additional M&M's on top if desired.
Tips
To prevent M&M's from sinking to the bottom, toss them in a little flour before folding into the batter.
For extra color, use a mix of regular and mini M&M's.
Leftover cooked pancakes or waffles can be frozen and reheated in a toaster.
