Ingredients
1 cup coarse cornmeal (polenta)
4 cups water
1 teaspoon salt
2 tablespoons butter (optional)
1/2 cup grated cheese (e.g., telemea or feta) for serving
Instructions
In a large pot, bring the water and salt to a boil.
Gradually whisk in the cornmeal, reducing heat to low to prevent lumps.
Cook, stirring constantly with a wooden spoon, for about 20-25 minutes until the mixture thickens and pulls away from the sides of the pot.
If desired, stir in the butter until melted.
Serve hot, topped with grated cheese and a dollop of sour cream if desired.
Tips
For a creamier texture, use fine cornmeal and cook longer.
Leftover mămăligă can be sliced and pan-fried the next day.
