Ingredients
2 slices white bread
3 slices canned luncheon meat (e.g., Spam), about 1/4 inch thick
1 tablespoon mayonnaise
1/2 teaspoon sriracha or chili sauce (optional)
2 leaves lettuce
2 slices tomato
1 slice cheese (e.g., cheddar or processed cheese)
Instructions
In a small bowl, mix mayonnaise with sriracha (if using) to make a spicy mayo spread.
Heat a non-stick skillet over medium heat. Add luncheon meat slices and cook for 2 minutes per side until golden brown and crispy.
Toast the bread slices lightly in the same skillet or a toaster.
Spread the spicy mayo on one side of each bread slice.
On one slice of bread, layer lettuce, tomato slices, cheese, and the cooked luncheon meat.
