Ingredients
1 cup granulated sugar
1/2 cup light corn syrup
1/4 cup water
1/4 teaspoon flavored extract (e.g., cherry, lemon, or peppermint)
2-3 drops food coloring (optional)
12 lollipop sticks
Instructions
Line a baking sheet with parchment paper and lightly spray with nonstick spray. Place lollipop sticks on the parchment, about 3 inches apart.
In a medium saucepan, combine sugar, corn syrup, and water. Stir over medium heat until sugar dissolves.
Bring mixture to a boil without stirring. Insert a candy thermometer and cook until temperature reaches 300°F (hard crack stage).
Remove from heat and let bubbles subside. Stir in flavored extract and food coloring if using.
Carefully pour syrup onto the ends of the lollipop sticks, forming circles about 2 inches in diameter. Use a spoon to shape if needed.
