Ingredients
1 box (15.25 oz) vanilla cake mix, plus ingredients called for on box (eggs, oil, water)
1/2 cup vanilla frosting
24 lollipop sticks
16 oz (1 bag) white candy melts or white chocolate chips
1 tbsp vegetable shortening or coconut oil (optional, for thinning)
Assorted food coloring (optional)
Sprinkles, sanding sugar, or other decorations
Instructions
Prepare cake mix according to package directions and bake in a 9x13-inch pan. Let cool completely.
Crumble the cooled cake into a large bowl. Add frosting and mix until well combined and the mixture holds together when pressed.
Roll the mixture into 1-inch balls (about 24) and place on a parchment-lined baking sheet. Insert a lollipop stick into each ball, pushing about halfway through. Freeze for 15-20 minutes until firm.
Melt the candy melts in a microwave-safe bowl in 30-second bursts, stirring until smooth. Add shortening or oil if needed to thin the coating. If desired, divide and tint with food coloring.
Dip each cake pop into the melted coating, tapping off excess. Decorate with sprinkles immediately. Stand upright in a styrofoam block or insert into a cardboard box with holes to dry.
Allow coating to set completely (about 10-15 minutes) before serving or storing.
