Ingredients
1 tablespoon olive oil
1 pound turkey franks, sliced into 1/2-inch rounds
1 (13 oz) bag tortilla chips
2 cups shredded cheddar cheese
1 (15 oz) can black beans, drained and rinsed
1 cup cherry tomatoes, halved
1/2 cup sliced pickled jalapeños
1/2 cup sour cream
1/4 cup chopped fresh cilantro
1 avocado, diced
Instructions
Preheat oven to 400°F (200°C). Line a large baking sheet with foil.
Heat olive oil in a large skillet over medium-high heat. Add turkey frank slices and cook, stirring occasionally, until browned, about 5 minutes. Remove from heat.
Spread tortilla chips evenly on the prepared baking sheet. Top with black beans, cooked turkey franks, and cherry tomatoes. Sprinkle shredded cheddar cheese evenly over the top.
Bake for 8-10 minutes, until cheese is melted and bubbly.
Remove from oven and top with pickled jalapeños, dollops of sour cream, diced avocado, and chopped cilantro. Serve immediately.
