Ingredients
1 (32 oz) bag frozen tater tots
1 lb ground beef
1 packet taco seasoning
2/3 cup water
2 cups shredded Mexican blend cheese
1/2 cup sour cream
1/2 cup salsa
1/2 cup guacamole
1/4 cup sliced black olives
1/4 cup sliced jalapeños
1/4 cup chopped green onions
1/4 cup chopped fresh cilantro
Instructions
Preheat oven to 425°F (220°C). Spread tater tots in a single layer on a large baking sheet. Bake for 20-25 minutes until golden and crispy.
While tots bake, cook ground beef in a skillet over medium-high heat until browned. Drain fat. Add taco seasoning and water, bring to a simmer, and cook until thickened, about 5 minutes.
Remove tots from oven and switch oven to broil. Transfer tots to an oven-safe serving dish or leave on baking sheet. Top with seasoned beef and sprinkle cheese evenly over the top.
Broil for 2-3 minutes until cheese is melted and bubbly. Watch closely to prevent burning.
Remove from oven and immediately top with dollops of sour cream, salsa, and guacamole. Sprinkle with olives, jalapeños, green onions, and cilantro. Serve hot.
Tips
For extra crunch, spread tots on a wire rack over the baking sheet.
