Ingredients
2 large sweet potatoes, cut into wedges
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 cup raw cashews, soaked in hot water for 1 hour
1/4 cup nutritional yeast
1/2 cup water
1 tbsp lemon juice
1 clove garlic
1/4 tsp smoked paprika
1/4 cup chopped fresh chives
1/4 cup diced red bell pepper
1/4 cup sliced jalapeños (optional)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, toss sweet potato wedges with olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
Bake for 25-30 minutes, flipping halfway, until golden and crispy.
Meanwhile, drain the soaked cashews and place in a blender with nutritional yeast, water, lemon juice, garlic, and smoked paprika. Blend until smooth and creamy.
When fries are done, transfer to a serving platter. Drizzle with cashew cheese sauce.
Top with chives, red bell pepper, and jalapeños if using. Serve immediately.

For extra crispiness, soak sweet potato wedges in cold water for 30 minutes before baking.
