1 lb baby potatoes, halved

8 slices bacon
8 large eggs
1/4 cup milk
2 tbsp butter
1 cup shredded cheddar cheese
1 avocado, sliced
1/2 cup cherry tomatoes, halved
2 green onions, sliced

Instructions
Preheat oven to 425°F. Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden and tender.
While potatoes roast, cook bacon in a skillet over medium heat until crispy. Transfer to paper towels to drain, then crumble.
