Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 (9 oz) bag barbecue potato chips
- 2 cups shredded Mexican blend cheese
- 1 cup canned black beans, drained and rinsed
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapeños
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a skillet over medium-high heat, heat olive oil. Add ground beef and cook, breaking it apart, until browned, about 5 minutes. Drain excess fat.
- Stir in chili powder, smoked paprika, garlic powder, salt, and pepper. Cook for 1 minute. Remove from heat.
- Spread barbecue chips evenly on the prepared baking sheet. Top with seasoned beef, black beans, and shredded cheese.
- Bake for 5-7 minutes until cheese is melted and bubbly.
- Remove from oven and top with diced tomatoes, jalapeños, sour cream, and cilantro. Serve immediately.
Tips
- For extra heat, add a drizzle of hot sauce before serving.
- If you prefer a vegetarian version, substitute ground beef with crumbled tofu or plant-based meat.
- Store leftovers in an airtight container in the refrigerator for up to 2 days; reheat in the oven to restore crispness.
