Ingredients
8 large butter lettuce leaves
1 tablespoon vegetable oil
1 pound ground chicken
3 cloves garlic, minced
1 tablespoon grated fresh ginger
1/2 cup finely chopped water chestnuts
1/4 cup finely chopped green onions
2 tablespoons soy sauce
1 tablespoon hoisin sauce
1 teaspoon sesame oil
1/4 cup chopped fresh cilantro
1/4 cup chopped roasted peanuts
Instructions
Rinse lettuce leaves and pat dry; set aside.
Heat vegetable oil in a large skillet over medium-high heat. Add ground chicken and cook, breaking up with a spoon, until browned and cooked through, about 5 minutes.
Add garlic and ginger; cook for 1 minute until fragrant.
Stir in water chestnuts, green onions, soy sauce, hoisin sauce, and sesame oil. Cook for 2 minutes, stirring occasionally.
Remove from heat and stir in cilantro and peanuts.
Spoon about 2 tablespoons of the chicken mixture into each lettuce leaf. Serve immediately.

For a vegetarian version, substitute ground chicken with crumbled firm tofu or chopped mushrooms.
