1 1/2 cups dried brown or green lentils, rinsed
6 cups vegetable broth or water
1 can (14.5 oz) diced tomatoes, undrained

Instructions
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes.
Add garlic, cumin, coriander, and turmeric; cook for 1 minute until fragrant.
Stir in lentils, broth, and diced tomatoes. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes until lentils are tender.
