Instructions
Preheat oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or grease lightly.
In a large bowl, whisk together flour, sugar, poppy seeds, baking powder, and salt.
In a medium bowl, whisk together melted butter, eggs, milk, lemon juice, lemon zest, and vanilla until well combined.
