Ingredients
1 cup granulated sugar
1/4 cup light corn syrup
1/4 cup water
1 teaspoon lemon zest
3 tablespoons fresh lemon juice
1/2 teaspoon citric acid (optional, for extra tartness)
Powdered sugar for dusting
Instructions
In a small saucepan, combine granulated sugar, corn syrup, and water. Heat over medium heat, stirring constantly until sugar dissolves. Bring to a boil without stirring until mixture reaches 260°F (hard-ball stage) on a candy thermometer.
Remove from heat and stir in lemon zest, lemon juice, and citric acid (if using). The mixture will bubble up.
Pour the hot mixture into a lightly greased 8x8-inch baking dish. Let cool at room temperature until firm, about 1 hour.
Once set, invert onto a cutting board dusted with powdered sugar. Cut into small squares or use a small cookie cutter to shape.
Dust with additional powdered sugar to prevent sticking. Serve immediately or store in an airtight container.

For a softer texture, cook to 250°F instead of 260°F.
