Ingredients
1 packet (85g) strawberry jelly crystals
1 packet (85g) lime jelly crystals
1 packet (85g) orange jelly crystals
1 cup boiling water per jelly flavor (3 cups total)
1/2 cup cold water per jelly flavor (1.5 cups total)
Prepare the fruit jellies: In separate bowls, dissolve each jelly crystal packet in 1 cup boiling water. Stir until completely dissolved, then add 1/2 cup cold water to each. Stir and set aside to cool slightly.
Pour each fruit jelly into separate shallow dishes (about 8x8 inch) to a depth of about 1/2 inch. Refrigerate for at least 2 hours until firm.
Make the milk jelly: In a saucepan, combine milk, sugar, and agar-agar (or gelatin). Whisk and bring to a gentle boil over medium heat, stirring constantly. Remove from heat, stir in vanilla extract. Let cool for 5 minutes.
Cut the set fruit jellies into small cubes (about 1/2 inch).
In serving glasses or parfait cups, layer the jelly cubes and milk jelly: Start with a layer of strawberry cubes, pour a thin layer of milk jelly (about 2 tablespoons) over them, then refrigerate for 10 minutes to set slightly. Repeat with lime cubes and milk jelly, then orange cubes and remaining milk jelly, refrigerating after each layer to prevent mixing.
Refrigerate the assembled parfaits for at least 1 hour until fully set. Serve chilled.
Tips
For a vegan version, use plant-based milk and agar-agar instead of gelatin.
You can use any combination of jelly flavors you like.
To speed up setting, place the jelly dishes in the freezer for 15 minutes instead of refrigerator.
Garnish with fresh fruit or mint leaves before serving.
