All the comforting flavors of lasagna in a cozy, one-pot soup. This easy recipe uses broken lasagna noodles, Italian sausage, and a rich tomato broth, topped with a creamy dollop of ricotta and melted mozzarella.

Ingredients
1 tbsp olive oil
1 lb mild or hot Italian sausage, casings removed
1 medium yellow onion, diced
4 cloves garlic, minced
1/2 tsp red pepper flakes (optional)
1 (28 oz) can crushed tomatoes
6 cups low-sodium chicken broth
2 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
8 oz lasagna noodles, broken into 1-inch pieces
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1/2 cup whole milk ricotta cheese
2 tbsp chopped fresh parsley (for garnish)
Instructions
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Transfer to a plate and set aside.
In the same pot, add the onion and cook until softened, about 4 minutes. Add garlic and red pepper flakes (if using) and cook for 30 seconds until fragrant.
Stir in crushed tomatoes, chicken broth, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat to a simmer. Return the cooked sausage to the pot.
Add the broken lasagna noodles and cook, stirring occasionally, until al dente, about 10-12 minutes (or according to package directions).
Reduce heat to low. Stir in heavy cream and Parmesan cheese until melted and combined. Taste and adjust seasoning if needed.
Ladle soup into bowls. Top each serving with a dollop of ricotta, a sprinkle of mozzarella, and a pinch of parsley. Serve immediately.
Tips
For a thicker soup, use only 5 cups of broth.
Leftovers can be refrigerated for up to 3 days; the noodles will absorb liquid, so add a splash of broth when reheating.
To make ahead, prepare the soup without the noodles and cream; refrigerate. When ready to serve, reheat, add noodles and cream, and cook until noodles are tender.
