Ingredients
1 lb lamb leg or shoulder, thinly sliced into strips
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp brown sugar
1 tbsp vegetable oil
1 tsp ground turmeric
1 tsp ground coriander
1/2 tsp ground cumin
2 cloves garlic, minced
1/2 cup coconut milk
1/2 cup creamy peanut butter
2 tbsp red curry paste
1 tbsp lime juice
16 bamboo skewers, soaked in water for 30 minutes
Instructions
In a bowl, combine soy sauce, fish sauce, brown sugar, oil, turmeric, coriander, cumin, and garlic. Add lamb strips, toss to coat, and marinate for at least 15 minutes.
Thread 2-3 lamb strips onto each skewer, weaving back and forth.
Grill skewers over medium-high heat for 3-4 minutes per side, until cooked through and lightly charred.
Meanwhile, in a small saucepan, whisk together coconut milk, peanut butter, red curry paste, and lime juice. Cook over medium heat, stirring, until smooth and heated through (about 3 minutes).
Serve lamb skewers with peanut sauce for dipping.
Tips
For extra flavor, marinate lamb overnight in the refrigerator.
Peanut sauce can be made ahead and reheated.
Serve with cucumber salad or steamed rice for a complete meal.
