Ingredients
8 lamb rib chops (frenched)
3 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme leaves
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon Dijon mustard (optional)
Instructions
In a small bowl, combine garlic, rosemary, thyme, olive oil, salt, and pepper to make a marinade.
Rub the marinade all over the lamb lollipops. Cover and refrigerate for at least 30 minutes (up to 4 hours).
Remove lamb from fridge 20 minutes before cooking to bring to room temperature.
Heat a large cast-iron skillet over high heat until smoking hot.
Sear lamb lollipops in batches, without crowding, for 2-3 minutes per side for medium-rare (internal temp 130°F).
Transfer to a plate and let rest for 5 minutes before serving.
Tips
To french the chops yourself, scrape meat and fat from the bone ends.
