  3. Meanwhile, prepare filling: combine brown sugar, cinnamon, chopped nuts, and raisins (if using). Set aside.
  4. Punch down the dough. Divide into 8 equal portions. Flatten each into a disk about 4 inches wide.
  5. Place about 1 tablespoon of filling in the center of each disk. Gather edges to seal, then flatten gently into a pancake, being careful not to tear.
  6. Heat a non-stick skillet over medium heat with a thin layer of oil. Place pancakes seam-side down. Cook for 2-3 minutes until golden brown, then flip and cook another 2-3 minutes, pressing gently with a spatula to flatten.
  7. Serve hot, as the filling will be very hot and liquid. Enjoy immediately.
