Ssam is a Korean dish where you wrap grilled meat, rice, and condiments in a lettuce leaf. This recipe features savory-sweet bulgogi-style beef and a spicy ssamjang dipping sauce.

Ingredients
1 lb beef ribeye or sirloin, thinly sliced
3 tbsp soy sauce
2 tbsp brown sugar
1 tbsp sesame oil
2 cloves garlic, minced
1 tbsp grated ginger
1 tbsp toasted sesame seeds
1/4 cup gochujang (Korean chili paste)
2 tbsp doenjang (Korean soybean paste)
1 tbsp rice vinegar
1 tbsp honey
1 tbsp water
1 head red or green leaf lettuce, leaves separated
1 cup steamed short-grain rice
Optional: sliced garlic, green chili peppers, ssamjang
Instructions
In a bowl, combine soy sauce, brown sugar, sesame oil, garlic, ginger, and sesame seeds. Add beef slices and marinate for at least 15 minutes.
Make ssamjang: In a small bowl, mix gochujang, doenjang, rice vinegar, honey, and water until smooth. Set aside.
Heat a large skillet or grill pan over high heat. Cook beef in batches until browned and caramelized, about 2-3 minutes per side.
To serve, place a lettuce leaf on your palm. Add a spoonful of rice, a few pieces of beef, and a dab of ssamjang. Top with optional garlic or chili. Wrap and eat.
Tips
For a more authentic experience, serve with perilla leaves alongside lettuce.
Leftover ssamjang keeps refrigerated for up to a week.
If you can't find doenjang, substitute with miso paste.
