Ingredients
2 cups strong brewed coffee, cooled
3 tablespoons coffee liqueur (optional)
3 large egg yolks
1/2 cup granulated sugar
1 cup mascarpone cheese
1 cup heavy cream
1 teaspoon vanilla extract
24 KIT KAT bars (or about 2 cups crushed)
2 tablespoons cocoa powder, for dusting
Instructions
In a shallow dish, combine cooled coffee and coffee liqueur (if using). Set aside.
In a heatproof bowl, whisk egg yolks and sugar together. Place over a pot of simmering water (double boiler) and whisk constantly until thick and pale, about 5 minutes. Remove from heat and let cool slightly.
In a large bowl, beat mascarpone cheese until smooth. Fold in the egg yolk mixture until combined.
In a separate bowl, whip heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until smooth.
Line the bottom of a 8x8-inch dish with a layer of KIT KAT bars (about 8 bars, broken to fit if needed). Dip each bar briefly in the coffee mixture (2-3 seconds per side) before placing.
Spread half of the cream mixture over the KIT KAT layer. Repeat with another layer of dipped KIT KAT bars and remaining cream mixture.
Dust the top with cocoa powder. Cover and refrigerate for at least 4 hours or overnight. Before serving, crush a few extra KIT KAT bars and sprinkle on top for garnish.
Tips
For a stronger coffee flavor, use espresso.
Refrigerate overnight for best texture.
Store leftovers covered in the fridge for up to 3 days.
