Ingredients
1 tablespoon olive oil
1 pound kielbasa, sliced into 1/2-inch rounds
1 medium onion, chopped
2 carrots, peeled and diced
2 celery stalks, diced
3 cloves garlic, minced
4 cups low-sodium chicken broth
2 (15-ounce) cans cannellini beans, drained and rinsed
1 (14.5-ounce) can diced tomatoes, undrained
1 teaspoon dried thyme
1 bay leaf
Salt and black pepper to taste
2 tablespoons chopped fresh parsley for garnish
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add kielbasa and cook until browned, about 5 minutes. Remove with a slotted spoon and set aside.
Add onion, carrots, and celery to the pot; cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in chicken broth, beans, tomatoes, thyme, bay leaf, and reserved kielbasa. Bring to a boil, then reduce heat and simmer for 20 minutes.
Season with salt and pepper to taste. Remove bay leaf. Ladle into bowls and garnish with parsley.
