Ingredients
1 cup cooked short-grain rice
1/2 cup frozen peas, thawed
1/2 cup canned corn, drained
1/2 cup diced cucumber
1/2 cup cherry tomatoes, halved
1/4 cup shredded carrot
2 slices ham, cut into small squares
2 slices cheese, cut into small squares
1 tablespoon soy sauce
1 teaspoon sesame oil
1 sheet nori, cut into thin strips
Instructions
In a small bowl, mix soy sauce and sesame oil. Add cooked rice and stir to combine.
Divide the seasoned rice among 4 bento box compartments or small containers.
Arrange the peas, corn, cucumber, cherry tomatoes, shredded carrot, ham squares, and cheese squares in separate piles on top of the rice or in separate compartments.
Garnish with nori strips. Serve at room temperature or chilled.
Tips
Use cookie cutters to cut ham and cheese into fun shapes.
Add other kid-friendly veggies like steamed broccoli or bell pepper strips.
Keep the bento box cool with an ice pack if packing for lunch.
