Ingredients
1 head cauliflower, riced (about 4 cups)
1 lb ground beef (80/20)
1 tbsp olive oil
1/2 cup diced onion
2 cloves garlic, minced
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1/4 cup tomato sauce
1/2 cup shredded cheddar cheese
1/4 cup sour cream
1 avocado, sliced
1/4 cup chopped fresh cilantro
1 lime, cut into wedges
Instructions
Place cauliflower florets in a food processor and pulse until rice-like. Set aside.
Heat olive oil in a large skillet over medium-high heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook 1 minute.
Add ground beef to the skillet. Cook, breaking up with a spoon, until browned, about 5 minutes. Drain excess fat if desired.
Stir in chili powder, cumin, smoked paprika, salt, pepper, and tomato sauce. Cook for 2 minutes, then remove from heat and cover to keep warm.
In the same skillet (or another), add the cauliflower rice. Cook over medium heat, stirring occasionally, until tender, about 5 minutes. Season with a pinch of salt.
Assemble bowls: Divide cauliflower rice among 4 bowls. Top with beef mixture, then add cheese, sour cream, avocado slices, and cilantro. Serve with lime wedges.
Tips
For extra flavor, toast the cauliflower rice in a dry skillet before cooking.
Store leftovers separately and reheat gently to avoid mushy cauliflower.
